Crustless Broccoli and Smoked Turkey Quiche
Description
Quiche is a remarkably versatile dish that fits well with real life. It’s flexible, forgiving, and amazingly easy to adapt based on what you have on hand. Once I have the egg mixture, I toss in leftover meat and any veggies that need to be used up. It works just as well for breakfast or brunch as it does for an easy dinner.

Preheat the oven to 350°F and set the oven rack in the middle. Lightly coat a deep pie dish with olive oil.

In a medium bowl, whisk together eggs, milk, cream, salt, pepper, mustard, and nutmeg until smooth. Set aside.

In a 12-inch skillet, sauté mushrooms over medium heat with 2 tsp butter and 2 tsp olive oil. You may add more oil if necessary. Cook until the mushrooms reduce in size and have released their liquid. Add the garlic and sauté for about a minute. Be careful not to burn the garlic. Remove from the pan and set aside.

In the same skillet, sauté broccoli over medium heat, with 1 tbsp butter and 1 tbsp oil in the skillet. Cover loosely and stir occasionally.

Cook until the broccoli is starting to soften (7-8 minutes). Add small amounts (about 1/4 cup at a time) of water if needed to prevent the broccoli from scorching.

Add the smoked turkey to the skillet and cook until it browns a little around the edges.

Layer mushrooms on the broccoli mix. Then, add mozzarella and white cheddar cheeses on top.

Layer mushrooms over the broccoli mixture, followed by the mozzarella and white cheddar cheeses.

Carefully pour the egg mixture over top.

Bake for 35 to 45 minutes, until the center is set.

Quick Tips
Ham can be substituted for smoked turkey. There’s no need to clean the skillet between cooking the mushrooms and broccoli. Smoked turkey is easy to grab from the deli counter. Ask for about 1 thick dinner slice at the deli counter. White cheddar cheese is used here for its flavor and appearance. But orange cheddar works nicely, too. Pour the egg mixture slowly at the end to help keep the fillings evenly distributed.
