Weekday mornings can be crazy in my home. We all have somewhere to be, and things feel chaotic, but the kids are dragging. Leaving on time might mean we skip breakfast unless something quick is ready. My Improved Chex Mix is a reliable option, but sometimes a sweet craving sneaks in. This honey vanilla Chex Mix fills that gap. It’s lightly sweet and still includes protein and fiber, so it holds us until lunch.

This mix contains about 6 to 7 grams of sugar per ½ cup serving. Most of the sweetness comes from the honey, with a small amount from brown sugar and the Goldfish. It’s less sweet than many store-bought snack mixes and kid cereals. Still, it’s sweet enough to feel satisfying.

Instructions

  1. Preheat the oven to 250°F.
  2. Mix Chex cereals, Goldfish, and nuts. Set aside.
  3. Melt the butter in the microwave.
  4. Add honey. Microwave for about 20 seconds. Stir to mix. The goal is to thin the honey enough that the mixture can easily be tossed with the Chex/nut mix. If it still remains too thick to easily mix, microwave for 10-20 seconds more.
  5. Mix in vanilla, brown sugar, and salt.
  6. Put the Chex/nut mix in a roasting pan.
  7. Sprinkle cinnamon over the top.
  8. Pour the honey mixture on top and mix well. It should coat all the pieces.
  9. Bake for 1 hour, stirring every 15 minutes.

Quick Tips

Stirring every 15 minutes is important. It prevents sticking and scorching. Let the mix cool fully before transferring it to storage containers so it stays crisp. This mix works well for breakfast on the go, lunchboxes, or afternoon snacking. Like a little salt with your sweet? Add ½ to ¾ cups pretzel sticks.
