They are the right balance between a little crunch and a little chew around the edges, with a soft center. The ratio of chocolate chips to cookie dough is just right too. Not too this, not too that. These are the cookies I come back to every time.

  1. Preheat the oven to 350°F. Then adjust the rack to the middle. Line 2 baking sheets with parchment paper.
  2. In a medium bowl, whisk the dry ingredients: flour, baking soda, and salt.
  3. In the bowl of a stand mixer, cream butter and both sugars until smooth.
  4. Add the egg and vanilla and mix on low speed until combined.
  5. Gradually add the flour mixture and mix until just incorporated. Avoid overmixing, which can make the cookies tough.
  6. Add chocolate chips until just incorporated.
  7. Drop the dough by heaping tablespoons onto the prepared baking sheets. Space about 12 cookies on each pan.
  8. Bake one sheet at a time. Adjust the baking time based on cookie size:

    * Small cookies: 8–10 minutes

    * Large cookies: 10–13 minutes

  9. Let the cookies cool for 5 minutes on the baking sheets. Then move them to wire racks to cool completely.
  10. Makes approximately 18-24 cookies, depending on size

Quick Tips

The method of measuring flour matters: Do not use the measuring cup to scoop flour out of the container. This packs it and can result in too much flour. Instead, spoon the flour into the measuring cup and level it with a straight edge.

For crunchier cookies, bake for an extra 1 to 2 minutes after they match the baking description.
