Easy Creamy Mushroom Sauce for Prime Rib, Chicken, or Pasta

Heat the butter and olive oil in a medium skillet over medium heat.

Add the onions and cook until soft, about 6–8 minutes, stirring often. If the onions begin to caramelize before they soften, add 1 tbsp of the broth.

Add the garlic and cook until fragrant, about 30 to 60 seconds.

Add the mushrooms, stirring occasionally. Season with salt and pepper. Sprinkle in the cornstarch and make sure it is fully incorporated to avoid lumps. Cook until the mushrooms release their juices and brown slightly.

Add the broth, Dijon mustard, and thyme. Simmer until the sauce thickens

Tips
As written, this recipe makes enough to spoon over 4 to 6 servings of meat. If you plan to use it for pasta, double the recipe.
Serve over steak, chicken, potatoes, or pasta. It even works beautifully as a simple side dish. My daughters usually don’t care for mushrooms, and they still kept coming back for more.
Small to medium mushrooms work best. Baby bellas offer the best flavor and texture.
