Making Thanksgiving dinner can feel like a juggling act. Between keeping the turkey tender and juicy, timing all the sides just right, trying not to feel overwhelmed, and finding time to enjoy the holiday, it’s a lot!

Over the years, I’ve learned that planning ahead makes all the difference. And remember, if you’re hosting a crowd, ask guests to bring a dish or two. Just be specific about what you need so you get a nice variety on the table.

🗓️ Your Turkey Timeline

4–6 Weeks Before Thanksgiving

  • Choose your turkey early.
    If you’re buying frozen, grab one when they first hit the stores so you can find the right size. Ordering ahead is also a good option.
    Fresh turkeys should only stay in the refrigerator for one to two days before roasting, so plan your timing carefully. If you’re buying fresh, ordering ahead is highly recommended.

Pre-Brined or Not?

I prefer a turkey that’s not pre-brined. A pre-brined turkey has a lot of extra water (and salt), and since turkeys are sold by weight, I’d rather not pay for salt water. Pre-brined birds can be flavorful and moist, but I find it’s easy, just as good, and more satisfying, to brine it myself.

How Big Should Your Turkey Be?

Allrecipes has a handy guide that breaks it down by servings and whether you want leftovers:

  • 1 pound per person if you don’t want leftovers
  • 1½ pounds per person if you do

Personally, I always make extra. A 10-pound bird is more than enough for my family of four, and that’s just how I like it. I want plenty left for sandwiches and a big pot of Turkey Corn Chowder (my grandmother’s recipe – stay tuned for that one!).

5 Days Before Thanksgiving

If your turkey is frozen, move it to the refrigerator to thaw. Leave it wrapped.

24–36 Hours Before Thanksgiving

Brine your turkey if you choose. If your turkey is still slightly frozen, don’t worry – it will finish thawing as it brines.

Mix your brine according to the recipe, place the turkey and brine solution into a brining bag, seal it, and set the bag in a large bowl before refrigerating.

Learn from my mistake:
One year, I didn’t have a brining bag and used a 2-gallon freezer bag instead. It worked fine until the seal popped open on my counter – brine everywhere! It was a mess, but fixable (most “fails” are). I replaced the lost liquid with about four cups of water and one-third cup of salt, tucked it back in the bowl, and popped it into the fridge. Lesson learned: always support the bag with a bowl!

A Thanksgiving Throwback

Years ago, a friend and I decided to cook Thanksgiving dinner together – neither of us had ever roasted a turkey before. We realized, too late, that ours was still rock solid. In a desperate move (one I don’t recommend), we thawed it in hot water. The result? Edible, but dry.

Instructions

  1. Remove the turkey from the refrigerator one hour before roasting. Discard the brine.
  2. Place the turkey on a roasting rack in a roasting pan and set aside.
  3. Preheat the oven to 425°F.
  4. Remove giblets and the neck from the cavity.
  5. If you plan to make my Turkey Corn Chowder, store the neck in a sealed container in the freezer (unless you’ll use it within 24 hours).
  6. Mix the rub ingredients together.
  7. Place the turkey breast-side up on the roasting rack.
  8. If stuffing the turkey, do it now, loosely.
  9. Rub half the mixture over the breast side.
  10. Turn the turkey breast-side down and rub the remaining mixture over the back. The turkey should remain breast down for the majority of the roasting. This will ensure the meat is moist.
  11. Add 2 cups of water to the roasting pan.
  12. Place the pan on the bottom rack of the oven and bake for 30 minutes. If it starts browning too quickly, cover loosely with foil.
  13. Reduce the oven temperature to 325°F and roast for 1 hour.
  14. Carefully turn the turkey breast-side up (I use two tongs - one on each end). Increase the oven temperature back to 425°F and roast another 40–55 minutes, or until the internal temperature reaches 170°F.
  15. Check periodically and tent with foil if it browns too fast.

Note

Tips for Success

Always check the temperature in the thickest part of the meat without touching the bone.

Let the turkey rest for at least 20 minutes before carving — this keeps it juicy.

Adjust the rub as needed for a larger bird. The recipe above works well for turkeys up to 12 pounds.
