Nana’s Classic Holiday Stuffing

Prep the bread: Cube (¼-inch pieces) the bread and leave it in a bowl for 24 hours, stirring occasionally. If your bread is fresh, arrange slices on a baking sheet in a single layer. Bake at 350°F for 5–7 minutes per side until slightly stale but not browned. Place it in a medium bowl.

Cook the vegetables: Melt butter in a medium skillet over medium heat. Add celery and onion. Sauté until soft, about 10 minutes.

Combine: Pour the sautéed mixture over the bread, mix thoroughly. Then add the poultry seasoning and mix again. The texture should be gnachy* - soft and moist enough to hold together when squeezed, but never soggy.

Stuff or heat separately:

- If stuffing the turkey, pat the cavity dry first. Gently spoon in stuffing without packing it down. Experts recommend baking it separately for food safety.
- Not all the stuffing will fit. Wrap the remaining stuffing and bake with the turkey for approximately 25 minutes.
- If making separately: Place stuffing in a 5 to 6-quart slow cooker and turn onto high for 30 minutes. Reduce the temperature to low and cook 3 to 4 hours more, or until hot and cooked through. If the stuffing is finished before your meal is ready, it can remain in the slow cooker on warm.

Melt butter in a medium saucepan over medium-low heat.

Sauté garlic and mushrooms. Stir often, until mushrooms soften and release their liquid.

If they begin to scorch, add 1–2 tbsp broth.

Remove from heat, chop more if desired, and stir it into the stuffing mixture

Quick Tips
- Make ahead: Prep the stuffing a day before Thanksgiving to save time.
- Texture check: Add broth 1 tbsp at a time until the mixture feels soft and slightly sticky (“gnachy”).
- Don’t soak mushrooms when cleaning - they will absorb water. Cremini mushrooms have great flavor, but button mushrooms work in a pinch.
- In my family, stuffing isn’t ready for the turkey until it’s what my parents call gnachy. It’s a Pennsylvania Dutch word. It's one of those old kitchen terms that doesn’t translate perfectly, but you know it when you see it. The bread cubes are just moist enough to hold together, soft and flavorful, but never soggy. That’s gnachy.
Holiday variation: Mix in the sautéed mushrooms and/or a little cooked bacon or sausage if your family likes a heartier version.
