A Little Backstory
This chili recipe originally came from Leslie, the daughter of one of my mom’s close friends. I used to babysit her when we were kids. Years later, seeing her with her own family was one of those moments that really made time feel strange. One day I was helping her with homework; the next she was juggling kids, schedules, and dinner just like the rest of us.
Through all that time passing, this recipe has stayed steady. It’s simple and reliable. On chilly days, sometimes I prefer to cozy up with a movie or a good book instead of cooking. I chose to include elk in the recipe as a nod to our dads who used to hunt together. The recipe works just as well with turkey or beef.
Why This Chili Works for Busy Days
Once everything is in the pot, it almost cooks itself. Stir occasionally, inhale the savory smells, and dinner is basically done.

Sauté the onion and peppers together until softened. Add the meat and cook until browned. Add garlic and stir for 1 minute, until fragrant.

Drain and rinse both cans of beans.

Combine all ingredients except corn, cilantro, and salt in a large soup pot. Simmer for 1 hour.

Add corn and cilantro. Simmer for another 30 minutes.
